Salted Toffee Oatmeal Chocolate Chip Cookies.

That’s quite a mouthful. And it was the most delicious mouthful of cookie I’ve ever had.

Tiff took an oatmeal cookie recipe and altered it to include toffee and chocolate chips at my request. Why? Last March, when Tiff (sister), Jess & June (best friends), and I went to New York, we went to this wonderful little cookie shop in West Village called Milk & Cookies. They had this cookie called “salted oat surprise” which was OMG so good. After eating all of our cookies, we figured out that it was probably a salted toffee oatmeal chocolate chip cookie. Since then, Jess and I have been badgering Tiffany to bake us these cookies. She finally got around to it and my my my…they were definitely worth the wait.

-2 c. flour
-1 c. oats
-1 tsp baking powder
-1/2 tsp cinnamon
-1/2 tsp salt
-1 c. brown sugar
-1/2 c. granulated sugar
-2 sticks unsalted butter
-2 eggs
-1 tsp vanilla extract
-4 oz. semi sweet choco chunks, 4 oz. toffee bits, sea salt (all of these can be adjusted to your liking)

Bake at 350 F for 11-13 minutes

Salted Toffee Oatmeal Chocolate Chip Cookie TrayTip: Oatmeal does not stay together quite like other cookies do, so I would recommend separating them a little further than you do with normal cookies (and further than pictured here).

Before popping them in the oven, lightly sprinkle some coarse sea salt flakes (:
